One of the things I love most about JACEK is the opportunity to collaborate with friends who are creating world-class businesses and beautiful artisanal products. I recently had the pleasure of joining David Brown, co-founder of Solmano Mezcal, on a trip to the palenque in Santiago Matatlán, Oaxaca, where this exceptional mezcal is made.

What struck me most was how much mezcal and chocolate have in common. Both are rooted in history and tradition, cultivated with deep respect for the land, and transformed through fermentation into something truly luxurious.

This experience inspired the Mezcal Sunrise Bonbon, which is crafted using Solmano Espadín in a pomegranate float over a bright citrus ganache for a beautifully balanced bite.
