Healthy Cocoa Nib Granola (No Added Sugar)

 

Dive into a world where wholesome meets delight with our Healthy Cocoa Nib Granola! This recipe is a treasure trove of nutrients, combining the goodness of old-fashioned rolled oats, a mix of raw nuts or seeds, and delightful coconut ribbons, all enveloped in a subtle hint of sea salt and ground cinnamon. The beauty of this recipe lies in its versatility, allowing you to utilize whatever nuts or seeds you have on hand.

Ingredients:
4 cups old-fashioned rolled oats, ideally large grain
1 ½ cups raw nuts and/or seeds (use up what’s in your pantry)
¼ cup coconut ribbons (or shredded)
½ teaspoon of sea salt 
½ teaspoon ground cinnamon
2 tablespoons virgin olive oil
1 teaspoon vanilla extract
⅔ cup dried fruit like berries and chopped stone fruit
½ cup of cocoa nibs shop cocoa nibs
 

  Preheat oven to 350Fand line a large baking sheet with parchment paper.

In a large mixing bowl, combine the oats, nuts/seeds, coconut, salt and cinnamon. Mix well.

Pour in the oil and vanilla. Mix until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.

Bake until lightly golden, about 20 mins, stirring halfway.

Let the granola cool completely. Top with the dried fruit and the cocoa nibs (these are pre-toasted to no need to roast again).

Transfer the granola to an airtight container, and feel free to break it up with your hands for a finer cereal.
