# 12 Trailblazer Whiplash Cookie Recipe

Trailblazer Whiplash Cookies with Manjari Chocolate

These cookies are a perfect ensemble of power snack and dessert. Dried cranberries, along with a variety of nuts and seeds, pair beautifully with the Manjari chocolate by Valrhona (64%).

Ingredients

1 Cup almonds (toasted in oven for 5 minutes)

3/4 Cup sunflower seeds

1 Cup dried cranberries

1/4 Cup sesame seeds

1/4 Cup flax seeds

3 Cups [large flake] oatmeal

5 Tablespoons freshly grated orange peel

2 Tablespoons unsalted butter, at room temperature

1/3 Cup Extra Virgin olive oil
1 Cup dark brown sugar, lightly packed
2/3 Cup granulated sugar
2 extra-large eggs
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon cloves
1 teaspoon kosher salt

5 Tablespoons milk

1 Cup Manjari Chocolate, chopped into smaller pieces

Directions

Preheat the oven to 350 degrees F.

Place the almonds on a sheet pan and bake for 5 minutes, until lightly browned. Set aside to cool. Chop very coarsely.

In a large bowl, beat the butter, olive oil, brown sugar, and granulated sugar together with a mixer on medium-high. With the mixer on low, add the eggs, one at a time, and the vanilla.

Sift the flour, baking powder, cinnamon, ginger, cloves and salt together into a medium bowl. With the mixer on low, slowly add the dry ingredients to the butter mixture.

Set the mixer aside. Add the oats, cranberries, roasted almonds, sunflower seeds, sesame seeds, flax seeds, and Manjari chocolate and orange peel – mix just until combined. Add the milk and stir lightly.

Using a tablespoon, drop 2-inch mounds of dough onto sheet pans lined with parchment paper. Flatten slightly. Bake for 12 to 15 minutes, until lightly browned. Transfer the cookies to a baking rack for complete cooling. Enjoy!
