Pistachio & White Chocolate Cookie Recipe

I couldn’t stop eating these cookies. They are so soft and delicious… a real crowd pleaser.
– 1 cup softened butter
– 1/4 cup white sugar
– 3/4 cup brown sugar
– 1 tsp of vanilla
– 1 package (4 servings) instant pistachio pudding
– 2 eggs
– 2 1/4 cup flour
– 1 tsp baking powder
– 1/4 tsp cloves
– 1/4 tsp allspice
– 1/2 tsp cinnamon
– 3/4 cup Valrhona Ivoire white chocolate, chopped (available at JACEK Chocolate Couture)
– 1 cup chopped pistachio nuts (optional)
1. Cream butter with sugar. Add vanilla. Mix in pudding powder and mix until smooth. Beat in eggs.
2. In a separate bowl combine flour, baking powder, cloves, allspice, and cinnamon. Add to batter.
3. Stir in chocolate chunks and/or nuts.
4. Bake at 350F until golden (about 15 minutes).
Makes 3 dozen.
