Wine & Chocolate Pairings – May 2016

The ‘Art, Chocolate, Wine and Flowers’ event held at FaBLOOMosity’s beautiful floral studio on Sunday, May 15th 2016, was a huge success.  100 people joined us for an unforgettable day.  As promised to guests, we wanted to share the notes for the wines and chocolate pairings (a big thank you to Sasha McCauley for compiling these notes!).

The Ned Sauvignon Blanc paired with the Lemon Melt Away

A homage to Jacqueline’s history, The Ned Sauvignon Blanc has intense citrus and green apple scents, with green pea and herbal notes.  Crisp and fresh, this wine has citrus flavors- lemon, grapefruit, and green apple crispness.  The acidity of this wine makes flavors pop, pairing beautifully with the JACEK Lemon Melt Away (available).

 

Markham Chardonnay paired with the Earl Grey Truffle – A Wino’s Lady

Earl Grey Buttery aromas with baked pear, apple crisp and vanilla, with a hint of lemon and floral notes.  Rich and lush in the month, with the pear, apple and lemon flavors carry through along with buttery pastry and a lemony finish.  Layers of texture pair with the richness of the Earl Grey truffle (this truffle is no longer available- limited edition for Mother’s Day).

 

Crios de Susana Balbo Rosé of Malbec paired with Raspberry Tea Truffle

Raspberry Beret Crios Malbec is bright and fresh, with intense raspberry and strawberry scents.  The palate is medium bodied and zesty, with oodles of red fruit- cherry, raspberry and pomegranate. Dry, with an orange zest finish, a great versatile rosé that will pair with a number of foods, including the Raspberry tea truffle (this truffle is no longer available- limited edition for Mother’s Day).

 

Baileyana Pinot Noir paired with the Golden Milk Truffle

An unexpected pairing that surprised us with how well they work together Baileyana Pinot Noir has a gorgeous bouquet, scents of bright cherries, cola, anise, spice, delicate rose petal and hints of mocha.  On the palate this wine is full bodied, with bright fruit, silky tannins, round and ripe.  Flavors of mocha, cherry and anise, with good acidity.  Balanced, truly a lovely wine that paired wonderfully with the Golden Milk Truffle (this truffle is no longer available- limited edition for Mother’s Day).

 

True Myth Cabernet paired with the Petite Audrey

A classic pairing, like a little black dress True Myth Cabernet Sauvignon is loaded with black fruit aromas: black cherry, blackberry, black currant, and blueberries.  Bold, rich fruit, those black fruits come through to the palate, along with spice, cola, tobacco and caramelized oak.  A tasty wine, that gets better when paired with the Petite Audrey.

 

The Botanist Gin paired with the Matcha Truffle- Janine’s (from FaBLOOMosity) favorite gin

The Botanist Gin is a complex gin layered with a multitude of floral, herbal, spearmint, and citrus aromas and flavors, alongside the clean juniper.  Made from the classic nine botanicals of gin, plus 22 more botanicals sourced on Islay (to learn more check out the web site http://www.thebotanist.com), this artisanal gin is beautifully balanced with the layering of flavors and a creamy mouth feel.  The creamy mouth feel and layered flavors pair well with the Matcha Truffle, earth creamy goodness (only available until May 27th, 2016).
