This Easter season, we will be launching our first ever colouring contest! Colour the Easter Bunny for your chance to win three reproductions of your design. There will be winner chosen from each JACEK location and Instagram.

Contest Rules:

1) Must be submitted to one of the JACEK Chocolate Couture locations:

Responsibilities:

  • Provide 5-star service to guests at either our Sherwood Park or downtown location
  • Packaging orders
  • Keeping the shop clean (very clean!); daily, weekly and monthly cleaning schedule
  • Rotating stock & merchandising
  • Preparing orders
  • Opening and closing duties
  • Taste testing!

Candidate Requirements:

  • Must have a positive, can-do attitude
  • Must have transportation
  • Must be committed to our core purpose of spreading joy
  • Must be able to work well under pressure in peak seasons
  • Must be available to work weekends and holidays when needed
  • Must have excellent time management skills, with a high level of detail
  • Must be willing to work autonomously and with a team

Hours per week: approx. 30 hours (available between the hours of 9am-530pm)

It’s here, the Throw Back Collection! The Winter Collection 2016/2017 contains an assortment of 6 decadent chocolates, flavours from past collections.  It is enJoyable to revisit some favourite flavours, and try a new pairing.  The Earl Grey truffle was from the Mad Hatter Collection.  The Mad Hatter Collection was when I did my first pairing with the Earl Grey truffle, at that time I paired with Girard Chardonnay.  This is a great pairing, I still recommend, but I couldn’t resist the opportunity to try the truffle with something new.

Earl Grey: Earl Grey tea infused milk chocolate ganache, suited in a dark chocolate shell (gluten free).

Fattoria Le Pupille Morellino di Scansano DOCG 2014, Tuscany Italy: One of my favourite wines this fall, a delightful find that comes from Fattoria Le Pupille, located in the Tuscany region of Italy, a small estate owned by Elisabetta Geppetti. This wine has a really lovely nose with scents of black tea, violets, black cherry, raspberries and red plums with a hint of balsamic and tobacco leaf.  A really tasty wine, with flavors of red fruits and balsamic, with dried fruits on the finish.  The acidity is well balanced by the fine tannins; the body has good depth and a distinguished richness.  A joy to drink!  A blend of 90% Sangiovese, 5% Malvasia Nera and 5% Alicante.

Together – The Earl Grey Truffle works really well with a an elegantly oaked Chardonnay, the citrus flavours in the wine complement the Earl Grey notes, and the oak profile creates a weight that complements the richness of the truffle. I could have left the pairing at that, but this wine I tried and really enjoyed earlier in the fall was stuck in my head, and I thought the two would work.  One afternoon I stopped by Jacek on 104St, with wine in hand, and tried with Nina and Jamie.  We all agreed these two are a Joy together!  The tea notes in the wine echo the Earl Grey, the acidity from the Sangiovese cuts through  the richness of the truffle, and the milk chocolate works with the fine tannins in the wine.

This is an elegant, Joyfull pairing. Use for an afternoon High Tea, as the sweet note at a cocktail party, and your cozy nights in.  Give these as a gift for the tea lover in your life, hostess gifts, and buy a set for each of your girlfriends.

This wine is available at Sunterra Cellars downtown, and at Everything Wine in Sherwood Park.

The Winter Collection 2016/2017 contains an assortment of 6 decadent chocolates, flavours from past collections.  It is enjoyable to revisit some favourite flavours, and try new pairings.  A rich bold truffle, that pairs beautifully with Compass Box Spice Tree.

Café de Olla: Spiced dark chocolate mocha ganache infused with orange zest and spices, like cinnamon and clove (gluten friendly).

Compass Box Spice Tree Blended Malt Scotch:

The Spice Tree is made from 100% malt whisky sourced from northern Highland distilleries. The primary maturation is in a mix of first-fill and refill American oak.  The secondary maturation is where things get interesting – the whisky is put into barrels with heavily toasted new French oak heads.  This is an innovative casking method in the Whisky world, a way of obtaining the unique flavour profile while complying with the Scotch Whisky Association.  The first version of this Whisky was discontinued after threat of legal action from the SWA, read more about Compass Box.

The nose is lovely – fragrant and aromatic with notes of dried herbs, spices, orange rind, oak and vanilla. There are notes of  brown sugar, bourbon, and malt with a hint of pepper. Rich, round and sweet in the palate, with flavors of vanilla, almonds, toffee and hints of chocolate and mocha.  The finish is long and sustained, with lingering notes of vanilla and brown sugar.  One of my favorites from the Compass Box signature range, I love the beautiful nose.

 

Together –This pairing is about innovators-  JACEK in the Chocolate World and Compass Box in the Whisky World, and strong distinct flavours.  One of the guidelines for pairings is to balance like with like, in this case the boldness and richness of these two.  They have complimentary flavours, vanilla and orange, mocha and almond.  As well as like notes- both are spicy with hints of orange.

Perfect for a cold winter’s night as we head into the very cold months, and something different for book club.

A Spicy Pairing- Café De Olla and Susana Balbo Late Harvert Malbec

Chili: Dark chocolate delicately laced with chili (gluten free).

Susana Balbo Late Harvest Malbec: I’ll start at the finish (the flavours left in the mouth after you have swallowed the wine) in this wine, a long lush finish of spicy cherry. When the finish is this good, you want  get to it, and to get there you have to try the wine.  The beginning is a beautiful nose with ripe black cherry and plums, baking spices of cloves, cinnamon, and hints of violets and tobacco.  Then the palate, layers of ripe red fruits are combined with notes of dark chocolate and spice with a touch of anise leading to an amazingly long finish. Lush, rich red dessert wine with a tone of layers making this an outstanding dessert wine.

Together: The spice of the truffle is subtle at first, then it grows as you finish it.  The finish on the wine is lush and rich with a sweetness that balances the heat of the truffle.  Chocolate and spice, berries and violets all these flavours swirl in your mouth, a textured layered pairing that ends with warmth as the flavours subside.

Save this for a cold January night, when you need a little heat in your life. Perfect for your fierce girlfriend, your feisty aunt, the best Girl Boss who is blazing a trail of awesomeness, and the passionate lady Red in your life.  Use for an easy dessert at your next dinner party, as a sophisticated end to a snowy Sunday Brunch, and for Boxing Day curled up by the fire.  A great gift for the hostess with the mostess, your favourite red headed radio announcer, and all those who like it spicy.
